Our gluten free Toast Bread has a beautiful golden crust and an open crumb. The toast bread is high in fiber such as bamboo, psyllium and flaxseed which contribute to a more nourishing and satiating bread. It has an authentic bread look and a fantastic volume.
The dough is very easy to handle and comes as a concentrate as well as a 100% bread premix where you only have to add yeast, oil and water. Moreover, the toast bread has been developed to ensure high stability during processing and an exceptional baking performance.
RECIPE
TOAST BREAD
1,000 g Credin Gluten Free Toast
45 g Yeast
45 g Oil
35 g Glycerol (optional)
900 g Water
PROCEDURE
Kneading time: 2 min. slow + 4 min. fast
Dough temp.: 26-27°C
Scaling weight: 500 g per bread in a tin
Profing time: 1 Hour
Steam: 5 sec.
Baking temp.: Insert at 230°C and reduce to 180°C
Baking time: 50-60 min.
