Try this fantastic roasted toast with tomatoes, ham and cheese based on our gluten free Toast Bread. The bread has a nice golden crust and open crumb and is high in fiber such as bamboo, psyllium and flaxseed which contribute to a more nourishing and satiating bread.
The dough for the toast bread is very easy to handle and comes as a concentrate as well as a 100% bread premix where you only have to add yeast, oil and water. Moreover, the toast bread has been developed to ensure high stability during processing and an exceptional baking performance.
RECIPE
TOAST BREAD
1,000 g Credin Gluten Free Toast
45 g Yeast
45 g Oil
35 g Glycerol (optional)
900 g Water
PROCEDURE
Kneading time: 2 min. slow + 4 min. fast
Dough temp.: 26-27°C
Scaling weight: 500 g per bread in a tin
Profing time: 1 Hour
Steam: 5 sec.
Baking temp.: Insert at 230°C and reduce to 180°C
Baking time: 50-60 min.
