Gluten free oat bread

Our gluten free Oat Bread is a moist and tasteful bread with whole grain oat flour, sour dough and a high content of oat fibers. The bread has an open crumb structure, a fantastic taste of sour dough and a nice rustic apperance. It is a gluten free bread where you can feel and sense the bread quality. In this recipe we have added seeds and kernels into the dough at the end of the mixing time.

 

The Oat Bread has a low content of salt and a high content of fiber. Save it for days as it stays moist and delicious. Furthermore oats are a part of a nutritious and filling meal, as oats are whole grains.

 

The dough for the oat bread is easy to shape and is based on the oat bread mix which is a 100% premix, where you only must add yeast and water.

 

RECIPE

OAT BREAD

1,500 g Credin Gluten Free Oat Bread
50 g Yeast
1,425 g Water

Add your own tasteful seeds and kernels

 

PROCEDURE

Kneading time: 3 + 3 min using spiral mixer
Dough temp.: 26-28°C
Scaling weight: 550 g per bread in tin or proofing basket
Proving time: Approx. 50 minutes
Oven temp.: 250°C reduced to 200°C
Steam: Normal at insert
Baking time: Approx. 45 minutes
For decoration: Cover with seeds and kernels or oat flour
For variation: Cut into small squares for portion size breads

 

TIP: Create many variations of crispy bread and buns with this premix. You can also add vegetables and gluten free grains to the dough and create exiting new varieties or scale the bread in proofing baskets.
