The gluten free cinnamon rolls are based on our versatile soft dough premix. They have a fantastic sweet taste combined with cinnamon and is perfect for almost any occasion. Our cinnamon rolls have a caracteristic swirl shape which is possible by using our gluten free soft dough.
The soft dough is a 100% premix, where you only must add sugar, salt, yeast, oil and water. The dough has a good texture and is easy to roll down and shape.
RECIPE
CINNAMON ROLLS
1,000 g Credin gluten Free Soft Dough
80 g Sugar
10 g Salt
40 g Yeast
960 g Water
40 g Vegetable oil
Cinnamon Filling
PROCEDURE
Kneading time: 2 + 2 minutes
Add oil to the dough and knead for further 1 minute
Dough temp.: 26-28°C
Scaling weight: Roll down to 4 mm, add cinnamon filling and roll into swirls (4 cm)
Proving time: Approx. 40 minutes
Egg wash before baking
Oven temp.: 230-220°C (deck oven)
Steam: Normal at insert
Baking time: Approx. 15-20 minutes
Tip: Decorate the rolls with sweet icing. The rolls are also delicious with pizza sauce and herbs as filling.
