Gluten free buns with blueberries and chocolate

Create your own variation of delicious buns with dried fruits, chocolate and nuts. We have made a tasteful bun in a more rustic appearance and added blueberries and chocolate chunks for a nice sweet flavour and texture.

 

The dough is based on the soft dough premix and is easy to handle. The soft dough is a 100% premix, where you only must add sugar, salt, yeast, oil and water. Wich ensures a solid and consistent production and a uniform quality.

 

The soft dough premix can be used for a large variety of inspiring recipes. It is perfect for coffee bread, savoury snacks, burger buns, cinnamon swirls, twisters and much more. The mild taste makes it sutiable for both sweet as well as salty snacks and rolls.

 

RECIPE

BUNS WITH BLUEBERRIES AND CHOCOLATE

1,000 g Credin Gluten Free Soft Dough
80 g Sugar
10 g Salt
40 g Yeast
960 g Water
40 g Vegetable oil
Chocolate chunks, Frozen blueberries and Custard cream

 

PROCEDURE

Kneading time: 2 + 2 min. Add oil, chocolate chunks and blueberries to the dough and knead for further 1 minute
Dough temp.: 26-28°C
Scaling weight: Approx. 100 g per bun. Cut out with custard cream and put into appropriate silicone moulds
Proving time: Approx. 40 minutes
Oven temp.: 230-220°C (deck oven)
Steam: Normal at insert
Baking time: Approx. 20 minutes
 

Tip: Create more tasteful variation with chocolate, nuts and fruit.
