This tasteful gluten free baguette is based on our gluten free Bread Base. Which gives you both volume, delicious bread taste and an nice crumb structure. You are ensured an easy and stable process from kneading the dough to a perfect baking performance.
It is a very versatile base and you can create almost any gluten free bread type you desire just by adding tasteful seeds and kernels.

BAGUETTE
1,500 g Credin Gluten Free Bread Base
30 g Salt
30 g Vegetable Oil
55 g Yeast
1,200 g Water, 35°C
PROCEDURE
Mixing time: 2 min. slow + 3 min. fast
Dough temp.: 26°C
Scaling: 350 g for baguette
Proofing time: 45–50 min.
Baking temp.: 250°C – 190°C
Baking time: 20–22 min.
Steam: 8 sec.
